Default Higher Hitch Weight--Does it matter?

Looking at front kitchen trailers which have a higher hitch weight. A Jayco Eagle 282FKS has an unloaded hitch weight of 1125. I don't have a tow vehicle yet, but if the tow vehicle is capable of the higher hitch weight, does a higher hitch weight make any difference in handling or anything else?
