Default Camping Info needed

We will be traveling from Paragould, Arkansas (NE corner of state) to Raton, New Mexico (NE corner of state) in June. Hubby wants to take a bit longer to get there rather than driving straight through as he used to do. We will be traveling I-40 to Amarillo then head north to Raton from there. He wants to drive only 5-6 hours each day and take 2-3 days to get there. Can anyone suggest some nice camping places that are not too far off the interstate that we can stay at on the way in Oklahoma (or Texas even though this is the wrong place to ask that)? He prefers pull through sites as he still does not have this backing up thing down quite yet (unless it is an unmanned vehicle, more on that later!), plus we are also towing a small open trailer behind our 5th wheel.
