  • Killed Lettuce

    this is a traditional hot salad common to the western NC mountains ... my memories of it go back over 50 years ... I realize that this recipe will shock some and horrify others but man-o-man do I ever enjoy it ... I have seen it in other places where it was called wilted lettuce .... it is simple to to fix:

    chop spring onions (both white and green parts) into pieces about 1" long

    clean and tear fresh leaf lettuce into bite size pieces

    fry 6 or so pieces of bacon and crumble it (save grease)

    arrange lettuce/onions/crumbled bacon on a plate

    heat bacon grease to where it is smoking (you can add additional oil if needed, I use olive oil)

    pour heated grease over the lettuce/onion/bacon, the hot grease will wilt the lettuce and be advised if water drops are on the lettuce it will spatter

    eat immediately


    picture one is of the salad and picture two shows yes I do eat it :b-wink:

    I would have to agree how good this really is, was raised on it. We had a large garden growing up and this was a staple for us in the spring. Mom didn't have a special name for it ,just called it wilted lettuce.....Ken

      WOW :ylw_cheers: ... a positive confirmation, I was expecting the anti pork fat folks to jump in with a much different response ... admit to being surprised and pleased to see it is also known in the Midwest :b-wink:

                Now that many health and nutrition experts are telling us that we need more fat in our diets to help process our carbs, this might be a really tasty way to get it.

                  I have eaten this several times. It is good, I just don't know how good for you it is.

                  I think you must have the same bad habit that I do. Eating.
                  When you get here next year, if that chinese buffet is still in business.
                  I expect between the 2 of us, we will be putting them out of business.
                  Or make them fire up the stove and refill the tray's of food.

                          jbar, do you think you would be able to add honey to the bacon grease before pouring over the salad? im a sweat dressing kinda gal.

                          i bet it you topped it off with shaved warm almonds it would be good as well.

                            never considered it ..:dunno:.. this is the way my grand parents made it so that is the way we do it .... please let me know if you decide to try it
