Not quite ready for prime time. Too sweet. Next batch will have half the sugar and use pickled beets. I like the eggs tart. These are kinda bland and sweet.

I'm going to tweak on Fox's recipe and maybe add some of your spices. If that doesn't work I'll try your recipe. Wonder how that would do with a habanero or 2 added.... That would add some kick.

"add some kick" .... yep, it should .... specially if you slit the peppers to allow the brine to soak up the full force of the peppers

How long can the brine keep? Mine is just 1 cup cider vinegar / 1 cup clear vinegar / 1 cup water....

Wondering how long it would keep and still be able to be used....

Maureen uses the same brine for one type of pickle and she says our extra brine can easily last a year .... no refrigeration needed

                    • How about when you have beets in it??? Actually though it's a moot point as I'm going to start over with the next batch...

Hmmm I could use your recipe and put in pink coloring, or green, or black.....

                      • can't speak for a brine that included beet juice .... we use red food coloring .... in referring back to a comment you made above, the brine we use will not be sweet
